Hier habe ich ein schnelles, leckeres und gesundes Rezept für die Mittagspause. Mit einem Raw Brokkoli Salat könnt ihr auch ohne Kochen am Vorabend etwas leckeres im Büro essen. Ich kombiniere Brokkoli mit Apfel und Paprika, dazu gibt es ein leckeres Senf Dressing. Probiert es aus.

Raw Brokkoli Salat (vegan)

Ihr braucht für 2 Personen als Hauptmahlzeit:

1 Brokkoli
1 Apfel
3 rote Spitzpaprika
1 Handvoll Basilikum
50g Pinienkerne


Saft von 2 Zitronen
2TL Dijon Senf
4EL Apfeldicksaft
2 EL Olivenöl
2EL Wasser
Salz + Pfeffer

1 Brokkoli waschen und in kleine Röschen teilen.

2 Apfel und Spitzpaprika abwaschen und in kleine Stücke schneiden.

3 Basilikum hacken und alles Zutaten in eine Schüssel geben.

4 Pinienkerne in einer Pfanne ohne Öl anrösten.

5 Für das Dressing Zitronensaft, Senf, Apfeldicksaft, Olivenöl, Wasser, eine Prise Salz und Pfeffer zusammen verquirlen und über den Salat geben.

6 Mit Salz und Pfeffer abschmecken.

7 Salat anrichten und mit Pinienkerne bestreuen.

Am besten schmeckt der Salat wenn er ein wenig durchgezogen ist.
